Preheat your oven to 350°F (175°C)
In a large mixing bowl, combine the almond butter, rolled oats, maple syrup, egg, baking soda, vanilla extract, and salt. Mix until well combined.
Using a cookie scoop, form dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
Use a fork to gently press down on each cookie ball to flatten it slightly.
Bake for 10-12 minutes, or until the cookies are golden brown around the edges.
Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
